In the Jewish religion, the purpose is to leave a marker that the grave has been visited. Usually, three stones are left, but I believe that is only a custom, not a law.

The short answer is that animal sacrifice was practiced during the time of the Temple in Jerusalem. Since the Temple's destruction in 70 B.C. and the absence of the High Priests, animal sacrifices and many other customs were abandoned. Why?
