Physical and genetic differences are not based on environment (climate, Latitude, etc). It is based on the genetic makup of people groups. The original members of various ethinic groups had certain charactoristics (latent and domanent genes in various catagories) which were emphasized because of the isolation of these groups from one another. Mountains, lakes, valleys and many miles separated these groups which didn’t interact with each other, and over time the dominant genes in the society made each group distinctive from one another.
