I would like to better understand the Catholic faith. It’s curious to me that Catholics pray to statues representing saints. Isn’t this a form of idolatry that the Bible speaks against? What is the reason for this practice?

Catholics don’t pray to statues. Think of the statue (or picture) as a photograph or painting of a loved one or heroic figure. The image is designed to evoke certain memories (what a great Christian this person was, etc.). The praying that often occurs is usually a request to that saint (since Catholics believe that saints are already in heaven and through the Eucharist are in communion with us) to pray to God for special intention. Just like when you ask a friend to pray for you.
