The reason is that, according to Jewish law, you should not eat the flesh of an animal with its mother’s milk. According to a Jew I worked with, it is basically a ‘safety procedure,’ that cheese just might be made with the milk of the animal you are eating! From what I understand, this had to do with an old pagan ritual that they were trying to avoid, but I can’t be positive. There are also restrictions on what kinds of flesh you can eat. Mammals must have split hooves and chew cuds and can’t have been fed animal protein. Fish (all seafood?) need to have fins and scales. You can only eat certain poultry and its eggs. More on the meat and dairy thing… there are some foods that are ‘parve,’ they’re kind of kosher neutral… they can be eaten with dairy. This includes fish and eggs. Dairy must come from Kosher animals. A lot of Kosher rules come from causing an animal the least suffering possible and draining it of blood, they also forbid eating animals that are unclean (Apparently because they have something weird about them… a fish without scales? Come on!) It’s kind of vegetarianism by proxy, actually, an animal that eats other animals isn’t clean and shouldn’t be eaten by you. I think originally all meat was banned, so eating animals that aren’t meat eaters was kind of the next best thing when people complained.
