I do not know why some people feel compelled to use such terminology, but I beleive it is through some misguided attempt at being politically correct. You are not the first person to notice how ridiculous this is. To paraphrase George Carlin, ‘People of color sounds like something you see when you’re on mushrooms. What are we supposed to call fat people? People of size?’
