The last rites (traditionally called ‘Extreme Unction’) can be administered as often as needed. If someone does recover after these are administered, they would not ‘carry over’ until the person actually does die. They need to be administered each time a person is in imminent danger of death. Extreme Unction both forgives sins (assuming, of course, the person is repentant), and in this way is like a ‘final confession’, and also is a ceremony in which physical healing is sought (James 5:14-15). The latter is not unheard of.
