I think this is a regional thing, as I’ve been to several different parts of the country and have never heard day/night/evening/morning replaced with ‘one’ anywhere other than here.

I say this all the time. I can’t speak for everyone else who says it, but the reason that I started using it was because I used to work the third shift in a customer service job. During the first half of my shift I was telling my customers ‘Good night!’ When the sun rose and I accidently said ‘good night’, I kept getting strange looks. It’s difficult to break a habit, so I just developed a new one by telling everyone a very generic ‘have a good one!’ And yes, you are very being very uptight. 😉
