There is no real proof behind this theory that kashrut laws come from health reasons. It makes ‘sense’ if you consider the times, but the official reason you will get if you ask any Orthodox or Conservative rabbi is that we must follow the laws of kashrut because we were commanded to. The way the laws have evolved over time is because of a Talmudic principle called ‘building a fence for the law’. If the law says you should not seeth a calf in its mother’s milk, then you will be in less danger of violating that law if you keep the milk and meat separate.
